This soup is also called “Riboilita” and is a hearty and comforting Italian soup that originated in Tuscany. "Riboilita" literally means "reboiled" in Italian, as it's traditionally made by reheating and simmering a thick vegetable and bread soup.
It's a rustic and satisfying dish that combines the heartiness of chickpeas with a medley of vegetables and bread that’s gotten a little dry. We make our own version of the bread. We toast our homemade sourdough until it’s crispy, perfect to add to the soup right before you eat it.
Chickpeas are a key ingredient in our version of this Tuscan stew, adding a good amount of plant-based protein and a creamy texture to the soup. There’s also tomatoes, Italian herbs and seasoning like rosemary, thyme, bay leaves, and garlic. This soup is finished with a little dollop of traditional pesto and homemade croutons.

Red curry sweet potato soup is a delightful and flavorful soup combing the natural sweetness of sweet potatoes with the bold, spicy, and aromatic flavors of Thai red curry paste.

Moroccan Red Lentil Soup, also known as "Harira" in Moroccan cuisine, is a hearty and aromatic soup that's popular in North Africa and the Middle East.
It's a wholesome and flavorful dish that combines red lentils with a blend of exotic spices and ingredients.
Red lentils are the main ingredient in this soup, providing a creamy and protein-rich base. When cooked, red lentils break down, creating a velvety texture that's both comforting and filling.
In this soup, you'll find a mix of spices like cumin, coriander, paprika, and cinnamon, and fresh herbs like cilantro and parsley. These herbs and spices infuse the soup with a warm and complex flavor profile, combining earthy, smoky, and slightly sweet notes.
Tomatoes are also a key component in Moroccan Red Lentil Soup. They contribute a natural acidity and a hint of sweetness that balances the richness of the lentils and spices.
And last but not least, we add a squeeze of fresh lemon juice just before serving to add a zesty and citrusy note, enhancing the overall flavor.

Thai inspired squash soup. The not-too-spicy green curry is balanced with coconut milk and the sweetness of the butternut squash. The topping is equally delish - sweet and salty medley of roasted coconut and peanuts.

This curry paste, along with some coconut milk, infuses the soup with a bold, zesty, and slightly spicy flavor that complements the sweetness of the butternut squash perfectly.

When you hear “vegetarian chili” do you think of a big ole bowl of boring? The Oh Soup! version is certainly not dull! It's smoky, bold, jam full of beans, and flavor packed with just the right amount of spice.
Top it with cilantro, onions, Fritos® corn chips (Bridget LOVES this, though Jim won't go there), sour cream, cheese, etc. You don’t have to eat this with our cornbread, but we highly suggest it.

The pickled jalapeños give this soup a bright tang that perks up every creamy bite. IT IS NOT SPICY, even for a Midwest palette, and don’t worry, the Jalapeños come on the side.

A creamy blend of cauliflower, potato, aged cheddar cheese, and a hint of dijon mustard. And yes, even cauliflower skeptics like this soup (you’re going to have to trust us on this one). This soup comes with sourdough dijon croutons* and we’ve heard they may be a star hit on their own.
Cauliflower Aged Cheddar Soup is a creamy and rich soup that combines the delicate flavor of cauliflower with the sharp and nutty notes of aged cheddar cheese.
This soup is a delightful fusion of comfort and sophistication, making it a beloved choice for those who appreciate hearty, cheesy, and vegetable-infused dishes.
The cauliflower provides a creamy and velvety base for the soup. The aged cheddar cheese adds depth, creaminess, and a delightful tang, elevating the soup to a whole new level of richness and flavor. The dijon mustard adds to the tang of this soup, keeping it a comforting, yet flavorful soup.
The star of the show here (so we’ve heard) is the dijon sourdough croutons. They are made from our homemade sourdough bread, coated with olive oil and dijon and crisped up to be delish additions to this soup.

This soup is a double bonus. Yes, it's creamy, potatoey, cheesy and delish. But just-like-a-baked-potato, the toppings (roasted broccoli, green onions, crispy potato skins) help make this soup one of our best sellers.

Bread is vegan, contains wheat/gluten
We started making sourdough as a fun hobby and have spent years and years trying to perfect “the perfect loaf”.
Oh, and let me back up for a minute, when I say “us”, I mean my husband Jim. He has the patience and dedication required to perfect this craft. I do not share these qualities…. BUT, am a happy “taste tester” of each loaf of sourdough goodness.
We use the sourdough recipe from Tartine Bakery in San Francisco and their description is perfect, “A substantial, dark, blistered loaf containing a voluptuous, wildly open crumb with the sweet character of natural fermentation and a subtle, balanced acidity.
We love the dark crust and the open “crumb” (inside of the bread) in this recipe and think it has the perfect amount of “sourdough” flavor.
