From Farm Roots to Veggie Soups

You can order delicious, homemade soups that warm your soul and that happen to be vegetarian. I’m Bridget O’Boyle, and I want to share what inspired me to start a soup company, and why I prioritize plant-based goodness.

Early days on the farm with Mom!

Growing up on a Minnesota hobby farm, fresh ingredients were always around. But while the garden flourished, fresh veggie options often took a backseat, with most of the bounty either frozen or canned for later. Despite this, a love for cooking blossomed in me, fueled by a desire to create something more than the "sad green mush" served at family dinners. Fast forward, and this passion blossomed into a desire to share my creations with my South Minneapolis community.

The turning point.

The pandemic was just that. As I prepared homemade soups for my family and neighbors, a spark ignited. A neighbor suggested, "Why not cook more of this delicious soup and sell it?" At that moment, amidst the challenges of the time, the idea for Oh Soup! was born.

Why the focus on vegetarian soups?

While I myself enjoy poultry and fish, I recognized a gap in the market for convenient, flavorful vegetarian meals. Inspired by my daughter's pescatarian lifestyle and the opportunity to bring wholesome, plant-based options to others, Oh Soup! simmered to life.

I decided I wanted to embrace vegetarian cooking and did a whole lot of research, recipe tests, and gradually got to a place where I felt confident in my vegetarian cooking.
