Tuscan Chickpea

Gluten-Free, Vegan

A rustic and satisfying dish that combines the heartiness of chickpeas with a medley of vegetables.

Chickpeas are a key ingredient in our version of this Tuscan stew, adding a good amount of plant-based protein and a creamy texture to the soup. There’s also tomatoes, Italian herbs and seasoning like rosemary, thyme, bay leaves, and garlic. This soup is finished with a little dollop of traditional pesto and homemade croutons.

Note: croutons are not gluten free, but they are packaged separately.

Red Curry Sweet Potato

A delightful balance of flavors and textures – creamy, sweet, spicy, and fragrant. It's perfect for warming up on a chilly day or as a comforting and nutritious meal.

The star ingredient is sweet potatoes - lending a creamy and naturally sweet base to the dish. They are known for their earthy, nutty flavor and provide a velvety texture when blended. The red curry paste adds a delightful layer of heat and complexity to the soup. It's a mixture of red chili peppers, garlic, lemongrass, and various spices, which infuses the soup with a spicy kick and a hint of Thai cuisine.

Moroccan Red Lentil

This soup is also known as "Harira" in Moroccan cuisine, is a hearty and aromatic soup that's popular in North Africa and the Middle East. 

Red lentils are the main ingredient in this soup, providing a creamy and protein-rich base. When cooked, red lentils break down, creating a velvety texture that's both comforting and filling.

In this soup, you'll find a mix of spices like cumin, coriander, paprika, and cinnamon, and fresh herbs like cilantro and parsley.

Tomatoes are also a key component in Moroccan Red Lentil Soup. They contribute a natural acidity and a hint of sweetness that balances the richness of the lentils and spices.

And last but not least, we add a squeeze of fresh lemon juice just before serving to add a zesty and citrusy note, enhancing the overall flavor.

This soup is pure Minnesota comfort food.

It’s a creamy soup, filled with wild rice, mushrooms, and finished with a little sour cream and dill. 

Green Curry Butternut Squash

A delightful and flavorful soup that combines the earthy sweetness of butternut squash with the aromatic and spicy notes of green curry.

Green curry  is a Thai culinary staple made from a blend of fresh green chili peppers, lemongrass, garlic, ginger, and various aromatic spices. This curry paste, along with some coconut milk, infuses the soup with a bold, zesty, and slightly spicy flavor that complements the sweetness of the butternut squash perfectly.

The soup is garnished with a roasted peanut and coconut topping - providing a delightful contrast in texture and a burst of nutty, toasty flavors.
